Wait wait wait. I've just noticed something. The tutorial only talks about adding one material to the new mesh, the one with the grass texture, having deleted both the others. But whereas my material box says "1 Mat 1," the one in the screenshot says "2 Mat 2." Am I a material short that would make this work?
EDIT: this is what comes of thinking I can fix this myself. I tried pressing the "UseAlpha" button on the grass texture, because I thought, you know, the vertex painting is supposed to be an alpha thing, right? Didn't work, of course, and now my soil has sharp edges again, and nothing I can do will bring back the shading.
Would anyone consider letting me send them the age files so that they can see what I've mucked up and tell me?

I'd consider it. Can't guarantee that I'll find the problem, but I'll look.

This is where they are. If this doesn't work, and it looks as though it isn't going to, I can email them to you if you send me the @ddress...

Okay. Fourth attempt, using all I've learned, and I have a solid landform with rock, soil and even, gods save us, grass. Time to do this billboarding plants.
I create the plane, I duplicate and rotate it, and..."go to Texture view"?
Does it mean "Texture Paint Mode"? Or should I have assigned a material to these planes at some point? No, that comes later. The manual's no help.
Froddit, I'm lost again. Help?

You're on the "Planting Some Grass" portion of the tutorial, right?
From the context and the associated screenshot, I think it should say "Switch to 'UV Face Select'". That's the only way to get that view of the plant with the red and green outline on the polygon. Plus, the previous step of the tutorial had you in 'Edit mode'.

- old irrelevant post Show Spoiler
They probably mean "Textured View" which is one of the render modes.

In this mode, you will be able to see the uv textures that you apply.
Edit: I looked at the "Planting Some Grass"/bushes Tutorial and did a ctrl-f search for "Texture view" and found nothing of the sort. Could you please say exactly precisely what mode you are asking about? Quote? Verbatim? Lots of different things can sound similar if you're not exact.
Edit2: I think I found what you're talking about.. "To make things easier later on, we will now UV map the image first, before changing the model. Exit Edit mode, and go to
texturing mode."
In this case, he means "UV Face Select", which is more often referred to as "UV Edit Mode"

I've changed the sentence on the wiki to be more clear.

Sorry for the wild goose chase, Nadnerb - I corrected the Wiki after I made my post.

Okay, thank you. I'm really sorry to keep doing this--I console myself that it's helping to make the tutorial safer and easier for idiots like me.
