Roofs are complicated multi-layered affairs, rather like victorian dresses with several petticoats.

An apt metaphor!

And these pics are great, just what I've been looking for. I'm a bit nervous about how many vertices the roof will require to be realistic-looking, but I suppose that's something I'll just have to find out.

Probably not so much. You just have to give the roof a little upwards slant at the edges. I'm not sure I would try to model all those beams sticking out the sides.
