Try disabling the aero effects and stuff when using Blender (or any 3D app) - those things eat memory for breakfast
I'm using Maya on Windows 7 and it's generally ok (although the school computer I'm using does have an i5 processor)

I had Blender running slower and slower over time on Win XP; upgrading the graphics gard driver to the latest release for my ATI(AMD) card did the trick.
But as Old Wolle said: this may work the opposite way for NVidia cards.
Not sure if this applies to Windows 7 too.

Well currently Blender works well on small and new projects, moving the various workstation bars has this laggy movement no matter what. I noticed the lagging most with Fahets loaded up, whilst it is a full Age it never used to lag that much in XP.
From looking around at it I think it may be a RAM issue more than anything, so I'll look into upping that (need to anyway).
