So how do you know that they went out?

In any case, since you mentioned sendmail logs on IRC, I assume you have complete control over the e-mail system on that server? If so, could you turn up some log level to have the outgoing SMTP connections logged? I administrate a Mac OS X mail server that uses Postfix as its MTA and it logs the status of every outgoing SMTP connection, including the SMTP ID assigned by the remote server.

One thing I notice in comparison to the last working message to the now failing GMX address is that your server now identifies itself as "GSU.main", while it was "chirpspace.com" before. Perhaps that could be the problem? SpamAssassin on phi.ibone.ch at least notices it, and maybe for GMX this is reason enough to discard the message without notice? (That would seem a bit harsh, but you never know.)
